​Lynchburg Balsamic Grilled London Broil Recipe

  1. Using a sharp knife, cut a 1/2-inch crosshatch pattern, 1/4-inch deep, on both sides of steak.
  2. Place in a 1 gallon ziptop bag.
  3. Place remaining ingredients in a blender.
  4. Process for 30 seconds and pour into ziptop bag with steak. Turn to coat steak and let sit at room temperature for 2 hours.
  5. Turn all burners on a gas grill to high. Cover and let heat for 15 minutes.
  6. Place London Broil on grill. Grill for 1 minute and then flip over. Continue to flip every minute until temperature reaches 125 degrees for medium rare or 130 degrees for medium. Total cooking time should be 5 to 9 minutes.
  7. Let rest 10 minutes before slicing.

Fat Bastard Hawgwash Sweet ‘N Sassy Cheesy BBQ Meatloaf

1 lb of ground beef
1 lb of ground veal
2 beaten eggs
4 torn slices of white bread
¼ cup of milk
1 tsp of worcestershire sauce
2 tbsps of yellow mustard
2 tbsps of ketchup
½ tsp of black pepper
1 cup of small diced sharp cheddar cheese
½ cup of shredded sharp cheddar cheese.


Preheat the oven to 375° and line a baking pan with tinfoil or parchment paper.
In a large bowl, mix all the ingredients together except for the Fat Bastard Hawgwash Sweet 'N Sassy Hickory Smoke Barbecue and ½ cup of shredded sharp cheddar cheese which are for topping.
Transfer the mixture to the pan and press it out gently to a bout 2 inches thick. Spread the BBQ over the meat mixture and bake for 1 hour.
Top with the cheddar cheese and bake for 5 more minutes to melt the cheese. Bonne Appétit!

Scotty O’Hotty Beer-Bacon Chipotle Beef Chili in a Bread Bowl

  • 1 lb. ground beef
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tsp. cumin
  • 2 tsp. Scotty O'Hotty Beer-Bacon Chipotle Hot Sauce
  • 2 tsp. chili powder
  • 1 tsp. garlic powder
  • 1/2 tsp. cinnamon
  • kosher salt
  • Freshly ground black pepper
  • 2 c. crushed tomatoes
  • 2 c. beef broth
  • 1 c. frozen corn
  • 4 sourdough bread rolls, scooped out into bowls
  • 1 c. Grated Cheddar
  • 1/4 c. chopped green onions
  • sour cream
  1. Preheat oven 350°.
  2. In a large pot over medium-high heat, brown beef, breaking up using a wooden spoon. Add garlic, onion, cumin, Scotty O'Hotty Beer-Bacon Chipotle Hot Sauce , chili powder, garlic powder, and cinnamon, and season with salt and pepper; sauté until softened, about 5 minutes. Add crushed tomatoes, broth and corn; simmer on medium-low for 10 minutes.
  3. Meanwhile, toast bread bowls on a sheet pan until lightly toasted and slightly dried out, 3 to 4 minutes.
  4. Ladle beef chili into the warm bread bowls and top with cheddar, green onions and a dollop of sour cream.

Pain Is Good Batch #114 Jamaican Beef Patties

  • Crust
  • 1¼ cups all-purpose flour
  • 1 cup whole-wheat pastry flour (see Note)
  • 1 teaspoon ground turmeric
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 4 tablespoons cold unsalted butter
  • 5 tablespoons canola oil
  • ⅓ cup ice water
  • 1 large egg yolk
  1. To prepare crust: Whisk all-purpose flour, whole-wheat flour, 1 teaspoon turmeric, ¾ teaspoon salt and baking powder in a large bowl. Cut butter into small pieces and quickly rub them into the dry ingredients with your fingers until smaller but still visible. Add oil and toss with a fork to combine. Whisk water and egg yolk in a small bowl. Add to the flour mixture and stir until the dough begins to come together. Knead in the bowl a few times until it forms a ball. Wrap in plastic and refrigerate for at least 1 hour.
  2. To prepare filling: Cook ground beef in a medium skillet over medium heat, breaking up the beef with a wooden spoon, until cooked through, 4 to 6 minutes. Stir in Pain is Good Batch #114 Jamaican Style Hot Sauce, breadcrumbs, water, thyme, ¼ teaspoon turmeric and ¼ teaspoon salt; mix well. Let cool.
  3. Preheat oven to 400°F.
  4. To make patties: Divide the dough into 6 equal pieces. On a well-floured surface, roll each piece into a 6-inch circle about ⅜ inch thick. Trim the edges to make an even circle (you might have a bowl the right size to use as a guide). Put about ¼ cup filling on half of the dough, leaving about a ¼-inch border. Fold the dough over the filling to make a half-moon shape and crimp the edges with a fork to seal. Place on a large baking sheet. Repeat with the remaining dough and filling. Bake the patties until golden brown, 35 to 40 minutes.
